om•e•let – King Crab from Cradle to Grave to Plate Squared

om·e·let also om·e·lette – n. A dish consisting of beaten eggs cooked until set and folded over, often around a filling.

A few nights ago we dined on King Crab at Honey Court (play by play with commentary). Despite giving it our bestest, we still had some to take home. Inspired by a dining experience at the Corson building, we decided to repurpose the left overs into an omelet, while watching Argo. And did you know? An Iranian omelet (Khagine) is made of egg beaten with sugar and quickly cooked with butter or oil in a frying pan. I will save this to try another time.

King Crab Omelet with Grilled Sweet Peppers and a few out-takes

Guiding Principles:

  • It is already pretty seasoned with garlic and salt, so additional likely overkill
  • Sautee the omlet innards before hand
  • Do not limit your self to the ingredients presented. Get creative, it’s all about the crab anyway.
  • Ugly omlets taste good too

Ingredients for about 2.5 omelets

  • 6 eggs (thank you to the girls for laying)
  • ~ ¼ milk
  • ½ – 1 cup chopped tomatoes
  • ¼ bunch or so spinach
  • 1-2 cups mushrooms
  • ½ cup chopped onion (or shallot, but might be too much flavor depending on left overs)
  • King Crab, however much you had left over. I think we had about 1 ½ cups
  • Gruyere, grated
  • ½ cup Cilantro, chopped for topping
  • ½ cup yogurt, sour cream or crème fraiche (if your yogurt is real think might need to thin a bit)
  • Salt and Pepper as needed
  • 2 T butter
  • Cooking spray


  1. Clean out crab meat into separate bowl. Try to get some of the extra “stuff” off (i.e. green onions, excessive garlic, batter) and cartilage (?) pieces

  1. Chop up items for filling: onions, mushrooms, tomatoes etc. I had pre-sliced mushrooms J. We left the spinach whole, just trimmed off the end.

  1. Melt about 2 tablespoons butter in fry pan.
  2. Add in veggies, saving the spinach for a bit later, since you don’t want to overcook it (unless you do)

  1. Add in crab. Not to cook, just warm up and mingle the flavors
  2. Add in spinach and stir it around for just another minute.

  1. Transfer filling to a plate and wipe out the pan, in preparation for omelet action.

  1. Crack your eggs and add ¼ cup milk. Whisk. Whisk. NOTE: first out-take: I hardboiled some eggs last evening and put in a bowl in fridge. My MIL took some eggs home for her self and filled up the carton using the eggs in the bowl, unbeknownst to me. I tried to crack TWO of them, didn’t work.

  1. Heat up pan and spray with cooking spray. Pour in egg mixture.
  2. Cook for just a minute or two, until it starts to get browned on bottom, but still wet on top. Then put in your filling and grate the cheese on top. Don’t get greedy. We did on the first one and it broke when folded. Also, line up ingredients more towards one-side or the other, unless you have a really big pan and can fold it up like a package

  1. Once cook, top with cilantro and yogurt et al. Add hot sauce etc.

Grilled Peppers

  1. Grill 2. Peppers, no oil or salt needed, just let the skin blister. Eat whole
