Roast carrots with sugar, spice and everything nice

A quick side dish with ingredients you probably already have on hand. Carrots are easy to roast and make for a healthy side pairing. This recipe first made its Odds & Hens debut as backup singers to the fried oysters but today is their day.

Roasted Carrots with honey, garlic and cayenne
  • Honey
  • Garlic
  • Cayenne or other spicy pepper powder
  • Salt and pepper
  • Carrots
  • Olive oil
  • Reduced balsamic (for drizzling at the end, if you like)


  • Clean, peel and chop the carrots

  • Toss the carrots with olive oil, honey, cayenne and garlic. It is quite easy to put in a clean plastic bag and then shake shake shake.

  • Place on a foil lined sheet, add salt and pepper. Roast at 375 for only about 15 minutes. But check them to see if they are done to your liking.
