A quick side dish with ingredients you probably already have on hand. Carrots are easy to roast and make for a healthy side pairing. This recipe first made its Odds & Hens debut as backup singers to the fried oysters but today is their day.Roasted Carrots with honey, garlic and cayenne
- Cayenne or other spicy pepper powder
- Salt and pepper
- Olive oil
Reduced balsamic (for drizzling at the end, if you like)
Clean, peel and chop the carrots
Toss the carrots with olive oil, honey, cayenne and garlic. It is quite easy to put in a clean plastic bag and then shake shake shake.
Place on a foil lined sheet, add salt and pepper. Roast at 375 for only about 15 minutes. But check them to see if they are done to your liking.
